Smoky, creamy, and flavor-packed, this street corn chicken rice bowl is an easy dinner made with juicy chicken, zesty rice, and creamy corn topping.
Ingredients

- 1½ lbs boneless chicken thighs
- 2 tbsp olive oil
- 1 lime, juiced
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- Salt & pepper to taste
- 2 cups corn kernels
- ¼ cup mayonnaise
- ¼ cup sour cream
- 1 tsp chili powder (extra)
- ¼ cup cotija cheese
- 2 tbsp chopped cilantro
- 2 cups cooked white rice
- Juice of 1 lime
- 2 tbsp chopped cilantro (for rice)
Instructions
- Mix chicken with oil, lime juice, and spices. Marinate 30 mins.
- Cook chicken in skillet 4–5 mins per side until golden. Rest, then slice.
- Char corn in skillet. Mix with mayo, sour cream, lime juice, chili, cotija, cilantro.
- Mix cooked rice with lime juice and cilantro.
- Assemble bowl: rice, chicken, corn topping, extra toppings.
Notes
- Store each component separately for up to 4 days.
- Add fresh toppings before serving.
