- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup melted butter
- 4 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 ½ cups fresh strawberries
- ½ cup strawberry jam
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and melted butter. Press into pan base. Bake 10 minutes. Cool.
- Beat cream cheese until smooth. Add sugar and vanilla, beat until combined.
- Add eggs one at a time, beating on low after each addition.
- Mix in sour cream until smooth. Pour batter over crust.
- Bake for 55–60 minutes until center is almost set. Turn off oven, let cheesecake sit inside 1 hour.
- Remove and cool completely. Refrigerate at least 4 hours or overnight.
- Heat strawberry jam until smooth. Toss fresh strawberries in jam and spoon over chilled cheesecake.
- Slice and serve chilled
Notes
- For a firmer crust, chill it for 30 minutes before adding the filling.
- Use room temperature ingredients for best texture.
- Fresh strawberries are recommended, but frozen (thawed) can work.
