This rich Reese’s Peanut Butter Cup Roll Cake is the perfect dessert for chocolate and peanut butter lovers. Soft chocolate sponge cake rolled around creamy peanut butter frosting, then topped with ganache and chopped Reese’s cups. It’s a crowd-pleaser at any event.

  • For the Cake:
  1. 4 large eggs
  2. 3/4 cup granulated sugar
  3. 1 tsp vanilla extract
  4. 1/3 cup all-purpose flour
  5. 1/4 cup unsweetened cocoa powder
  6. 1/2 tsp baking powder
  7. 1/4 tsp salt

  • For the Filling:
  1. 1/2 cup unsalted butter, softened
  2. 3/4 cup creamy peanut butter
  3. 1 1/2 cups powdered sugar
  4. 2 tbsp heavy cream
  • For the Ganache:
  1. 1/2 cup heavy cream
  2. 1 cup semi-sweet chocolate chips
  • Topping:
  1. 1 cup chopped Reese’s peanut butter cups

Instructions

  1. Preheat oven to 350°F. Line a 10×15-inch jelly roll pan with parchment paper and spray with non-stick spray.
  2. In a large bowl, beat eggs for 5 minutes until thick and lemon-colored.
  3. Gradually add sugar and vanilla.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture.
  5. Spread batter evenly in the prepared pan. Bake for 10-12 minutes.
  6. Immediately turn the cake onto a kitchen towel dusted with powdered sugar. Remove parchment paper and roll the cake in the towel. Cool completely.
  7. To make the filling, beat butter and peanut butter until creamy. Gradually add powdered sugar, then heavy cream until smooth and fluffy.
  8. Unroll the cooled cake and spread filling evenly. Roll up the cake again and refrigerate.
  9. For ganache, heat heavy cream until simmering. Pour over chocolate chips and stir until smooth. Let cool slightly before pouring over the cake.
  10. Sprinkle chopped Reese’s cups over the ganache. Chill until set before slicing.

Notes

  1. To prevent cracking, roll the cake while still warm.
  2. Use parchment paper for easy removal from the pan.
  3. Best served chilled. Store in refrigerator for up to 5 days.
