Ingredients

- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 2 cloves garlic, minced
- Salt and pepper to taste
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/3 cup Kalamata olives
- 1/2 cup crumbled feta cheese
- Lemon vinaigrette or tzatziki for serving
Instructions
- In a bowl, mix olive oil, lemon juice, oregano, garlic, salt, and pepper. Add chicken and marinate for 30 minutes (or overnight).
- Grill or pan-sear chicken over medium heat until golden and fully cooked. Let rest, then slice.
- Assemble romaine lettuce in serving bowls.
- Top with tomatoes, cucumber, red onion, olives, and feta.
- Add sliced chicken on top of each bowl.
- Drizzle with dressing of choice lemon vinaigrette or tzatziki.
- Serve immediately or store ingredients separately for meal prep.
Notes
- Store ingredients in airtight containers for up to 4 days.
- Keep dressing separate until ready to serve.
