Description

A fresh, vibrant Greek Chicken Salad Bowl with grilled chicken, crisp veggies, and Mediterranean flavors. Perfect for meal prep or a quick healthy meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/3 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • Lemon vinaigrette or tzatziki for serving

Instructions

  • In a bowl, mix olive oil, lemon juice, oregano, garlic, salt, and pepper. Add chicken and marinate for 30 minutes (or overnight).
  • Grill or pan-sear chicken over medium heat until golden and fully cooked. Let rest, then slice.
  • Assemble romaine lettuce in serving bowls.
  • Top with tomatoes, cucumber, red onion, olives, and feta.
  • Add sliced chicken on top of each bowl.
  • Drizzle with dressing of choice lemon vinaigrette or tzatziki.
  • Serve immediately or store ingredients separately for meal prep.
