Ingredients

  • lbs chicken breasts, cut into 1-inch strips
  • 1½ tsp sea salt
  • ¼ tsp black pepper
  • 1 cup all-purpose flour
  • 6 Tbsp olive oil, divided
  • 1 lb white mushrooms, sliced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 Tbsp unsalted butter
  • 3 Tbsp all-purpose flour
  • 1½ cups chicken broth
  • 1 Tbsp lemon juice
  • 1 cup half-and-half (or ½ cup milk + ½ cup heavy cream

Instructions

  • Preheat oven to 350°F (175°C).
  • Season chicken with salt and pepper, then dredge in flour.
  • Heat 3 Tbsp olive oil in a skillet; sear chicken 4–5 minutes per side. Transfer to a baking dish.
  • In same skillet, sauté mushrooms in 3 Tbsp olive oil for 5 minutes. Set aside.
  • Sauté onion and garlic for 2–3 minutes until soft.
  • Melt butter, stir in flour to make roux; cook 1–2 minutes.
  • Gradually whisk in chicken broth, lemon juice, and half-and-half until thickened.
  • Add mushrooms back to sauce and pour over chicken.
  • Bake uncovered for 25–30 minutes, until bubbling and cooked through.
  • Serve hot with herbs or your favorite side.

Notes

  • To make this ahead, assemble and refrigerate up to 24 hours before baking. Use gluten-free flour to make it gluten-free.
