- 2½ lbs chicken breasts, cut into 1-inch strips
- 1½ tsp sea salt
- ¼ tsp black pepper
- 1 cup all-purpose flour
- 6 Tbsp olive oil, divided
- 1 lb white mushrooms, sliced
- 1 medium onion, diced
- 3 garlic cloves, minced
- 3 Tbsp unsalted butter
- 3 Tbsp all-purpose flour
- 1½ cups chicken broth
- 1 Tbsp lemon juice
- 1 cup half-and-half (or ½ cup milk + ½ cup heavy cream
Instructions
- Preheat oven to 350°F (175°C).
- Season chicken with salt and pepper, then dredge in flour.
- Heat 3 Tbsp olive oil in a skillet; sear chicken 4–5 minutes per side. Transfer to a baking dish.
- In same skillet, sauté mushrooms in 3 Tbsp olive oil for 5 minutes. Set aside.
- Sauté onion and garlic for 2–3 minutes until soft.
- Melt butter, stir in flour to make roux; cook 1–2 minutes.
- Gradually whisk in chicken broth, lemon juice, and half-and-half until thickened.
- Add mushrooms back to sauce and pour over chicken.
- Bake uncovered for 25–30 minutes, until bubbling and cooked through.
- Serve hot with herbs or your favorite side.
Notes
- To make this ahead, assemble and refrigerate up to 24 hours before baking. Use gluten-free flour to make it gluten-free.
