Ingredients
1 large sweet potato, diced
1/2 lb ground beef (90% lean)
1/2 cup low-fat cottage cheese
1/4 avocado, sliced
1 tsp hot honey
1/2 small onion, chopped
1 tbsp taco seasoning
1 tsp olive oil
Salt and pepper to tast
Instructions
Preheat oven to 425°F. Toss diced sweet potatoes with oil, paprika, salt, and pepper. Roast for 25 minutes.
Sauté chopped onion in olive oil until soft. Add ground beef and cook through. Season with taco seasoning.
Layer roasted sweet potatoes and beef in a bowl.
Add cottage cheese, avocado, and a drizzle of hot honey.
Top with fresh herbs or chili flakes if desired
