Ingredients

1 cup flour (AP or whole wheat)
½ tsp baking powder
¼ tsp salt
1 tbsp olive oil or melted butter

Instructions
Mix cottage cheese, flour, baking powder, and salt in a bowl.
Knead until dough forms, divide and flatten into ¼-inch rounds.
Heat skillet on medium heat, brush with oil.
Cook each flatbread 2–3 minutes per side until golden brown.
Top with herbs, seasoning, or favorite add-ons.
Serve warm or store for later.

Fat-free cottage cheese works—just drain extra liquid.
To freeze: wrap individually and store in a freezer bag for up to 2 months.
