- 1 cup cooked chicken breast, shredded or chopped
- 2 tablespoons basil pesto (homemade or quality store-bought)
- 3 tablespoons plain Greek yogurt (2% or whole milk)
- 1/2 cup baby spinach or arugula (optional)
- 2 slices mozzarella or provolone (optional)
- Pinch of salt and black pepper
- Optional: 2 tablespoons chopped sun-dried tomatoes
- Optional: sliced avocado or roasted red peppers
- Optional: crushed red pepper flakes
Instructions
- Lightly toast the bagels for structure and crunch.
- In a bowl, mix chicken, pesto, and Greek yogurt; season with salt and pepper.
- Spread the chicken–pesto–yogurt mixture evenly over the bottom bagel halves.
- Add spinach or arugula and, if desired, cheese and optional add-ins.
- Top with the bagel lids, press gently, slice if you like, and serve.
- For meal prep, store filling and bagels separately; assemble just before eating.
Notes
- For a spicier bite, stir crushed red pepper or a teaspoon of sriracha into the yogurt.
- Use rotisserie chicken for speed or grilled breasts for leaner macros.
