- 1 lb cooked shredded chicken (rotisserie or boiled)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained
- 1 can (4 oz) diced green chiles
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, cubed
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft, about 5 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in shredded chicken, white beans, green chiles, cumin, chili powder, paprika, salt, and pepper.
- Pour in chicken broth and bring to a simmer. Cook for 10 minutes to blend flavors.
- Reduce heat and stir in cream cheese until melted and smooth.
- Add heavy cream and cheddar cheese. Stir continuously until the cheese melts and the chili is creamy.
- Simmer on low for another 5 minutes, stirring occasionally.
- Serve hot with tortilla chips, chopped cilantro, or a squeeze of lime.
Notes
- You can substitute cream cheese with sour cream for a lighter texture.
- This chili also works great with leftover turkey.
